Sized for smaller batches
Ten kilograms per cycle suits kitchens that cook ahead in smaller quantities and need to bring food down to a safe temperature quickly before it goes into storage. Rapid chilling helps protect texture, quality and freshness as well as food safety. The five positions are spaced at 75mm and fitted with GN 1/1 tray slides, so food can go straight in on the tray it was cooked on, with no transferring from oven to chiller. GN 1/1 shelves of 530 x 325mm are an option for kitchens that load the chiller differently.
Controls and food probe
The touchscreen carries an IP65 water protection rating, so it copes with a wet kitchen, and easy-to-use programmes guide each cycle. A temperature probe placed in the core of the food is linked to the unit, so the chilling cycle knows when the product has reached temperature without staff having to check it by hand.
Easy to clean
There are no visible screws or dirt traps inside and the door gasket is removable. Castors are fitted, so the unit can be wheeled out for cleaning around and behind it.
KB5, KB6 or Premier BCT?
The KB6 uses the same cabinet but doubles capacity to 20kg across 6 levels, so check your batch sizes before choosing. If you also need to blast freeze, the Foster Premier BCT range adds occasional freeze capacity, starting with the BCT15-7. Our commercial blast chiller buying guide explains how to size a blast chiller.

How quickly does the Foster KB5 chill food?
The KB5 chills 10kg of food from +70°C to +3°C within 90 minutes, across its 5 shelf positions.
Are shelves included with the Foster KB5?
No. The KB5 has GN 1/1 tray slides, and most kitchens slide the trays they have cooked on straight into the chiller, so shelves are not needed as standard. If you would rather use shelves, GN 1/1 nylon coated shelves can be added as options when you order, up to the 5 positions available.
Is there a replacement for the Foster Xtra XR10?
Yes. Foster's KB5 has replaced the Xtra XR10. It takes 10kg loads from +70°C to +3°C within 90 minutes and is run from an IP65-rated touchscreen.
What electrical supply does the Foster KB5 need?
The KB5 runs on a standard 230V, 50Hz single phase supply, so no three phase connection is needed. It draws 1.8A with a power rating of 400W.
